BANANA BLUEBERRY OATMEAL PANCAKES WITH CHIA AND FLAX SEEDS

Ingredients
  • ½ cup of oatmeal
  • 1 large banana (no too ripe)
  • 6 egg whites
  • 1 tb of chia seeds
  • 1 tsp of flaxseeds
  • Cinnamon to taste
  • ½ cup of blueberries (half for topping)
  • Topping: Coconut flakes to taste and blueberries
Instructions
  1. In a blender, blend all ingredients and half of the blueberries
  2. Coat the pan with coconut oil to prevent the pancakes from sticking
  3. Cook in the pan on medium-high heat.
  4. Top with coconut flakes, extra blueberries, and my delicious granola
  5. Enjoy!
