Peanut Butter Coconut energy balls

Ingredients
  • 10 pitted dates (about 1 cup)
  • 3 tb of peanut butter (no sugar or palm oil added)
  • ½ cup of gluten free oats
  • 1 tsp cocoa powder
  • 2 tb of virgin coconut oil
  • 1 tsp chia seeds
  • 1 tsp mangrove honey (optional)
  • ¼ cup unsweetened shredded coconut
Instructions
  1. First, put all the dates in a food processor and process until they become a creamy giant paste
  2. Then add all the remaining ingredients except the unsweetened shredded coconut and blend. You might need to stop the food processor to redistribute the mixture and pulse again to make sure everything mixes very well.
  3. Separate the mixture into 16 portions and make balls of about 1 inch diameter
  4. Place the unsweetened shredded coconut in a plate and roll the balls on top of the coconut so that it sticks to them
  5. Place in the freezer for about 20 minutes
  6. Enjoy!
