Sweet Potato Avo Shrimp bites

Ingredients
  • 1 large sweet potato
  • 1 large hass Avocado or 2 small ones
  • ½ lb of peeled shrimp tail removed (about 12 shrimps)
  • 1 tb of avocado oil
  • 1 minced garlic clove
  • ¼ tsp paprika
  • Juice of ½ lime
  • Pinch of himalayan salt
  • Pinch of Red pepper
  • 1 tb of chopped cilantro (optional)
Instructions
  1. Peel and slice sweet potato into ½ cm or ¼ inch thick
  2. To toast sweet potato slices you can either place the slices in the toaster at least twice until toasty or place in the oven in broil for 15 minutes flipping them half way.
  3. To marinate the shrimp, add shrimp to a bowl with the avocado oil, garlic, paprika, lime juice, and a pinch of Himalayan salt.
  4. In another small bowl, smash the avocado and add a pinch of Himalayan salt, pinch of red pepper and chopped cilantro.
  5. To cook the shrimp place them in a skillet on medium high for 2 minutes on each side.
  6. Once the sweet potato slices are toasty, spread the avocado and top with shrimp.
