Whole Roasted Cauliflower

- 1 Cauliflower head
- ΒΌ cup of avocado oil
- 1 tsp Dijon
- 1 garlic clove cut in half
- Himalayan Salt and pepper to taste
- Parsley finely chopped (as garnish)
- Preheat oven to 400F
- Remove the leaves from the bottom of the cauliflower and carefully cut off the stem.
- Rinse and pat dry the cauliflower
- Rub the cauliflower head with the 2 halves of the garlic clove and insert the halves inside the head through the bottom.
- In a small bowl mix the avocado oil, Dijon, salt and pepper (note: Dijon is already very salty so too much salt may not be needed)
- With your hands or a brush coat the cauliflower with this mixture, including the bottom
- Place in the oven for 45 minutes until crusted on the outside and tender on the inside.
- Let it cool and enjoy!
