Whole Roasted Cauliflower

Ingredients
  • 1 Cauliflower head
  • ΒΌ cup of avocado oil
  • 1 tsp Dijon
  • 1 garlic clove cut in half
  • Himalayan Salt and pepper to taste
  • Parsley finely chopped (as garnish)
Instructions
  1. Preheat oven to 400F
  2. Remove the leaves from the bottom of the cauliflower and carefully cut off the stem.
  3. Rinse and pat dry the cauliflower
  4. Rub the cauliflower head with the 2 halves of the garlic clove and insert the halves inside the head through the bottom.
  5. In a small bowl mix the avocado oil, Dijon, salt and pepper (note: Dijon is already very salty so too much salt may not be needed)
  6. With your hands or a brush coat the cauliflower with this mixture, including the bottom
  7. Place in the oven for 45 minutes until crusted on the outside and tender on the inside.
  8. Let it cool and enjoy!
