EGG AND SMOKED SALMON STUFFED AVOCADOS

Ingredients
  • 2 small hass avocados
  • 4 eggs with omega 3
  • 3 oz of wild caught Smoked Salmon
  • Red pepper flakes
  • Himalayan salt and pepper
Instructions
  1. Preheat oven to 425°F
  2. Cut the avocados in half (the long way) remove the seed.
  3. Scoop out about 1 Tb of avocado from the hole of each avocado half.
  4. Place the avocado halves on a small baking pan making sure that they will not tip sideways.
  5. Line the hollows of the avocados with strips on smoked salmon
  6. Crack each egg in a small bowl and season with a pinch of salt and a pinch of pepper.
  7. Spoon 1 egg yolk into each avocado half and as much egg white as it can hold
  8. Place in the preheated oven for about 15 minutes
  9. Sprinkle with red pepper flakes
  10. Enjoy!
