This recipe is special for my meat lovers out there. I’m finally way out of the first trimester of my pregnancy and I can finally cook some (not all) types of meat. Although I have to admit, I did need to ask my husband to mix the ground veal with all the herbs and condiments because my stomach still can’t stand that. This is the first time I make ground veal, actually I think it’s the first time I cook veal at all but the good thing is you can make this recipe with organic ground chicken, turkey, bison, grass fed beef or whatever tickles your pickle. Trying to become vegetarian or vegan? I get you. I’m working on a veggie burger recipe. Truth is, the world eats way too much animal protein and we do not need that much.
Confession #1: I used Ezekiel buns from Food for Life, which are a great choice when looking for healthy buns. However, I didn’t eat the whole bun! Are you surprised? I had to leave space for my 9 servings of fruits and vegetables per day! Yep! You read right, it’s 9 servings. That’s the latest recommendation from the new dietary guidelines released by the departments of Agriculture and Health and Human Services.
Confession #2: I don’t usually eat cheese! It’s terrible on my stomach, my digestive system, and my skin. However, this recipe has Feta from sheep milk and Oh! Was it delicious.
- For the Burgers:
- 1 lb ground veal
- ⅓ cup packed parsley
- 1 tsp onion powder
- 2 garlic cloves minced
- ¼ tsp sea salt
- For the Onions:
- 1 tb Olive oil
- 1 large yellow onion sliced
- 1 small jalapeño
- Salt to taste
- Optional:
- Feta cheese from sheep milk
- Healthy burger buns (I used Ezekiel from Food For Life)
- Add 1-2 tb of olive oil to a large skillet along with the sliced onions. Turn to medium heat stirring occasionally until onions become translucent for about 5 minutes.
- Reduce heat to medium low, stirring occasionally, until onions begin to brown for about 15 minutes.
- Add Jalapeños and stir for another 5 minutes.
- While the onions are browning, in a bowl mix the ground veal with the parsley, onions powder, garlic cloves, and sea salt. Use your hands lo mix everything well.
- Form round burger patties out of the meat.
- Heat skillet (or grill) to medium-high and cook patties for about 4 minutes on each side.
- Toast the buns and top burger with caramelized onions, jalapeños and feta cheese.
