This is one of my old time favorite pancake recipes. I’ve done it a million times and I’ve been perfecting the quantities of each ingredient.
They are healthy and filling and each ingredient comes packed with many health benefits:
- Oatmeal is known to promote good heart health and control blood pressure. Also, oatmeal has a slow rise in glycemic levels which if eaten before exercising will increase your energy for longer periods of time and increase fat burning.
- Contrary to what many people believe, bananas contain fiber and compounds that help control blood sugar levels after meals and reduce appetite.
- Blueberries are labeled as a “superfood”, they have the highest antioxidant capacity of all fruits and vegetables which protects us against cancer and DNA damage.
- Egg whites contain and excellent source of complete protein and they pack a huge number of vitamins and minerals in a very small amount of calories.
- Chia seeds are one of the best sources of fiber in the world, 40% of their weight is fiber. They also contain a ton of antioxidants and omega’3s. In your stomach they absorb water and blow up, which in turn will make you feel fuller for a longer period and therefore eat less afterwards.
- Just like chia seeds, flaxseeds are a great source of fiber, antioxidants, and omega 3’s.
- Cinnamon has a powerful anti-diabetic effect due to its ability to lower blood sugar levels. It is also known to protect against heart disease and fight inflammation in the body.
BANANA BLUEBERRY OATMEAL PANCAKES WITH CHIA AND FLAX SEEDS

Ingredients
- ½ cup of oatmeal
- 1 large banana (no too ripe)
- 6 egg whites
- 1 tb of chia seeds
- 1 tsp of flaxseeds
- Cinnamon to taste
- ½ cup of blueberries (half for topping)
- Topping: Coconut flakes to taste and blueberries
Instructions
- In a blender, blend all ingredients and half of the blueberries
- Coat the pan with coconut oil to prevent the pancakes from sticking
- Cook in the pan on medium-high heat.
- Top with coconut flakes, extra blueberries, and my delicious granola
- Enjoy!
