Is it a centerpiece or a Cauliflower? It’s a whole roasted cauliflower! Perfectly crusted on the outside, tender on the inside, super simple to make, and guaranteed to impress your guests!
Nothing is simpler to roast than a cauliflower. You can literally put it in the oven and continue enjoying with your guests or continue folding your laundry if you have no guests over. Also, between you and I, it’s very budget friendly while making you look like the ultimate chef. So next time you say that eating healthy takes a long time, skills and money, think about this recipe and give it a try!
There isn’t much cauliflower can’t do, it comes loaded with health benefits. So I guess eating the rainbow is not enough! You should eat your white vegetables like cauliflower too! Some of these benefits are:
- Reduces cancer risk. Studies show cauliflower can inhibit the onset of cancer by acting as an anti-mutagen that halts tumor cells from reproducing.
- Fights inflammation. Cauliflower is full of antioxidants that reduce oxidative stress in the body. It also contains a large amount of vitamin C that fights inflammation and boosts immunity.
- Reduces heart disease risk and brain disorders. The high level of antioxidants and anti-inflammatory compounds keeps arteries and blood vessels from plaque build up.
- Detoxification and digestion. The high sulfur content of cauliflower supports the liver and aids in detox.
- 1 Cauliflower head
- ¼ cup of avocado oil
- 1 tsp Dijon
- 1 garlic clove cut in half
- Himalayan Salt and pepper to taste
- Parsley finely chopped (as garnish)
- Preheat oven to 400F
- Remove the leaves from the bottom of the cauliflower and carefully cut off the stem.
- Rinse and pat dry the cauliflower
- Rub the cauliflower head with the 2 halves of the garlic clove and insert the halves inside the head through the bottom.
- In a small bowl mix the avocado oil, Dijon, salt and pepper (note: Dijon is already very salty so too much salt may not be needed)
- With your hands or a brush coat the cauliflower with this mixture, including the bottom
- Place in the oven for 45 minutes until crusted on the outside and tender on the inside.
- Let it cool and enjoy!
