Say NO to boring food! Part of the reason why I started this blog is because people think eating healthy is only eating grilled chicken, broccoli, and a lettuce and tomato salad. WRONG!! There are healthy and not boring ways to eat and this is what I call a quick, fun, balanced, amazing meal.
I had 5 of these for lunch with a side green salad which took me about 20 minutes to make. However, you can also have these as a snack or a fancy appetizer if you are having people over.
I strive for balance and I believe to achieve real health and wellness we have to eat a balanced meal full of nutrients, real food, and non toxic stuff.
Here we have:
- High quality protein coming from the shrimp which have 140 calories and 25 grams of protein in only 4 ounces.
- Complex non-refined carbohydrates coming from the sweet potatoes which give us the energy for that gym workout after work and decrease that annoying 4 o’clock sweet craving.
- Good fat coming from the avocado that helps us burn that belly fat we strongly dislike.
- Vegetables from the side green salad that has fiber and endless nutrients to keep us full until dinner time.
There isn’t much of a recipe but here it goes, it’s really simple!
- 1 large sweet potato
- 1 large hass Avocado or 2 small ones
- ½ lb of peeled shrimp tail removed (about 12 shrimps)
- 1 tb of avocado oil
- 1 minced garlic clove
- ¼ tsp paprika
- Juice of ½ lime
- Pinch of himalayan salt
- Pinch of Red pepper
- 1 tb of chopped cilantro (optional)
- Peel and slice sweet potato into ½ cm or ¼ inch thick
- To toast sweet potato slices you can either place the slices in the toaster at least twice until toasty or place in the oven in broil for 15 minutes flipping them half way.
- To marinate the shrimp, add shrimp to a bowl with the avocado oil, garlic, paprika, lime juice, and a pinch of Himalayan salt.
- In another small bowl, smash the avocado and add a pinch of Himalayan salt, pinch of red pepper and chopped cilantro.
- To cook the shrimp place them in a skillet on medium high for 2 minutes on each side.
- Once the sweet potato slices are toasty, spread the avocado and top with shrimp.
