This recipe is very simple to make and the best part is, it doesn’t require that you get many plates and bowls dirty.
This is the first time I put smoked salmon in the oven and I have to admit it’s simple delicious. The super smoky taste with the creaminess of the avocado is simply out of this world.
It has been proven through research that eating up to 3 egg yolks per day will not increase your bad cholesterol (LDL cholesterol). Eggs are much more than just cholesterol. Eggs are loaded with very high quality protein and about 45% of the protein is in the yolk. So, if you think that by eating one egg white you are eating 6 grams of protein (the amount of protein in a whole egg) you are very much wrong. This protein is important for muscle mass and bone health.
If you have a history of high cholesterol or even if you don’t, I recommend that you choose eggs with Omega 3’s or Pasture eggs. Omega 3’s help lower bad cholesterol.
On the other hand, the fiber content and monounsaturated fats in avocados will also help lower bad cholesterol levels and at the same time increase good cholesterol (HDL cholesterol), and reduce triglycerides.
This is what I call a super breakfast. It’s simple, healthy, and not boring.
- 2 small hass avocados
- 4 eggs with omega 3
- 3 oz of wild caught Smoked Salmon
- Red pepper flakes
- Himalayan salt and pepper
- Preheat oven to 425°F
- Cut the avocados in half (the long way) remove the seed.
- Scoop out about 1 Tb of avocado from the hole of each avocado half.
- Place the avocado halves on a small baking pan making sure that they will not tip sideways.
- Line the hollows of the avocados with strips on smoked salmon
- Crack each egg in a small bowl and season with a pinch of salt and a pinch of pepper.
- Spoon 1 egg yolk into each avocado half and as much egg white as it can hold
- Place in the preheated oven for about 15 minutes
- Sprinkle with red pepper flakes
- Enjoy!
