I tried this recipe once and I knew it had to be part of the blog. It’s extremely simple to make, it has very few ingredients, and I guarantee it’s kid friendly. You can try it as a side dish, as a snack, or even to bring to your friend’s party.
Sweet potatoes are by far one of my favorite starchy smart carbs, as I like to call them. The reason is because they are sweet and delicious, and they are packed with amazing health benefits.
Here are some of them:
- Great source of vitamin C: As most of you know, this vitamin is essential for our immune system and to help us fight off a cold. As not many of you are aware it also plays an important role in bone formation, and digestion. It is also very beneficial to the skin, as it helps us produce collagen to maintain the skin youthful elasticity.
- Great source of Vitamin D: This vitamin is both a vitamin and a hormone, and just like vitamin C, it also plays an important role in our immune system. Vitamin D is also crucial for healthy bones and plays an important role in our energy levels, skin, mood, thyroid gland, nerves, and heart.
- Contains Iron: This mineral is very important to have proper energy levels, metabolizing protein, and red and white blood cell production.
- Contain Potassium: This mineral helps us in regulating heartbeats and controlling muscle movements.
- Contain Magnesium: This mineral is known to promote relaxation and anti-stress.
- Contains phytonutrients that protect us against cancer.
- Most importantly, they are packed with fiber, therefore, their sugars are slowly released into the bloodstream for us to have a stable energy level and prevent any weight gain associated with other starches.
Ingredients:
- 1 large sweet potato (170 g)
- 1 ½ tbs of olive oil
- ¼ tsp of Himalayan salt
Method:
- Pre-heat the oven to 250F
- Thinly slice the potato without taking the skin off. This is the secret of the recipe. The thinner and even you slice them, the crispier they will turn out. If you have a mandolin, use it.
- Place the slices in a baking pan without overlapping each slice and place the baking pan in the middle of the oven.
- Bake in the oven for 1 hour (or until crispy), if they were not very thinly sliced they will probably need more time. Flip them on the 30 minute mark to bake evenly on both sides.
